Stir-fry Cucumber with Dried Shrimps |
Here is a simple way to cook cucumber to provide more varieties than just eating it fresh and raw, but of course, to retain its nutritional value, eating it raw is the best.
Ingredients (Serve 3 to 4 pax)
- 1 Cucumber
- 1 1/2 tablespoons of Dried Shrimps
- 1 tablespoon of Chopped Garlic
- 1 1/2 tablespoons of Light Soya Sauce
- 2 tablespoons of Hot Water or Chicken Soup for better taste
Preparation
- Peel off Cucumber skin by using a peeler
- Deseed Cucumber by cutting Cucumber into 2 (vertically), use a metal spoon to scoop out the seeds
- Cut it into thin slices
- Washed Dried Shrimps
Steps
- Stir-fry Dried Shrimps onto hot pan until fragrant
- Add Garlic and stir-fry until fragrant
- Add Cucumber and stir-fry until translucent
- Add Light Soya Sauce and Hot Water or Chicken Soup
- Stir-fry and Simmer (lower heat) until Cucumber is cooked approx 3 to 5 minutes
Serve while Hot!
Good to go with Rice and a few other chinese dishes.
Tips and Comments:
- A refreshing dish and is easy to cook with minimum ingredients!
- I prefer cucumber to be softer in this dish, but if you prefer cucumber to taste crunchy, shorten the time to simmer.
