Scrambled Eggs with Prawns
Sharing another simple eggs recipe. Great for professionals with busy schedule.
This recipe can be serve as another dish on the dining table.

Ingredients
  1. 4 Medium Eggs
  2. 8 Medium Prawns (Deshelled and Deveined)
  3. 1/2 tablespoon of Chopped Garlic
  4. 1 1/2 tablespoon of cooking oil
  5. 1/3 teaspoon of Salts
  6. Coarse Black Pepper
Steps
  1. Add Cooking Oil on hot pan
  2. Add Garlic and stir-fry until fragrant (before it turns brown)
  3. Add Prawns and stir-fry for approx 2 minutes
  4. Crack and add eggs. Stir-fry eggs and mix well with Prawns for approx 2 minutes
  5. Sprinkle Salts and Pepper and stir to mix well until eggs and prawns are full cooked
Serve with Rice with a few more Chinese Dishes.

This is a spicy dish for chilli lovers.
Ready-made Sambal Chilli can be conveniently purchase from any supermarket, hence it made the recipe for dish reduces at least half of its steps. But I have to say that I took a long time to choose the bottle of sambal chilli as there are many varieties. Some of them taste more sour than the rest, and from my experience, they look lighter or "orangish" in the color of the sambal chilli sauce. My preferred taste for this dish is spicy but yet it comes with a "little sweetness". Finally, I decided to go with A1 brand as it looks deep dark red, without the chilli seed visible. I tried cooking, and yeah... this is the taste that I wanted. =)
Ingredients
  1. 6 or 900g Crayfish/ Slipper Lobster (Use a kitchen scissor to cut into two)
  2. 2 Big Red Onion cut into thin slices
  3. 6 to 8 Tablespoons of Sambal Chilli (eg. Brand A1, quantity based on individual liking on spicyness)
  4. 2 tablespoon of Olive Oil or Any Cooking Oil
Steps
  1. Add Olive Oil into happycallpan
  2. Add half of the total Onion and stir-fry until translucent or fragrant
  3. Spread Crayfish onto happycallpan and close the lid
  4. When there is steam, turn the pan. Open the lid and spread the remaining onion on the other side of the crayfish and close the lid.
  5. After approx 2 minutes, add Sambal Chilli onto Crayfish and close the lid for approx 3 minutes or until the crayfish is cooked.
Serve while Hot!

Good to go with Rice and a bowl of Chinese Soup and 2 to 3 more Chinese dishes.
 

Stir-fry Asparagus with Prawns

Stir-fry Asparagus with Prawns
Ingredients
  1. 5 to 6 stalks of Large Asparagus (Cut off approx 4cm from the bottom of the stalk, and use a peeler to peel of the stem. Cut into small pieces as per photo above.)
  2. 12 Medium/Large Prawns (Peeled and Deveined)
  3. 1 tablespoon of Chopped Garlic
  4. 1 1/2 tablespoon of Oyster Sauce
  5. 2 tablespoon of Olive Oil
  6. 2 to 3 tablespoon of Hot Water
Steps
  1. Add Olive Oil into hot pan
  2. Add Garlic and stir-fry until garlic is fragrant. (before Garlic turns brown)
  3. Add Asparagus and stir-fry for approx 3 minutes
  4. Add Prawns and stir-fry for approx 3 minutes
  5. Add Oyster Sauce and Hot Water, stir to mix well and until prawns are cooked.
Serve while Hot!

Good to go with Rice with a few other chinese dishes.
