As such, this blog is borne out of a desire for a simple and organized way to manage the different variations of the dish that I tried. [Guest Post] Buttermilk Biscuits and Strawberry Jam by Qiana Di Bari

We had some strawberries in the fridge that were losing their luster, in perfect condition for a simple jam. Jam needs a medium and there is nothing better than buttermilk biscuits. Bingo! Breakfast. 




My simple versions of both are loosely based on Epicurious recipes. Perfect for a spring weekend, thirty minutes is all you'll need. 


yield: Makes 6 biscuits

Ingredients: 


  • 1 1/2 cups all-purpose flour
  • 1 1/2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • Rounded 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 stick (1/4 cup) cold unsalted butter, cut into 1/2-inch cubes
  • 3/4 cup well-shaken buttermilk
  • 1 tablespoon milk or cream for brushing biscuits
Put oven rack in middle position and preheat oven to 425°F.

Sift together flour, sugar, baking powder, salt, and baking soda into a bowl. (I got a little help from Jada and Michele here.) 


Blend in butter with your fingertips until mixture resembles coarse meal. 

Add buttermilk and stir with a fork until a dough just forms (dough will be moist).

Turn dough out onto a well-floured surface and knead gently 6 times. Pat out dough on a floured surface with floured hands, reflouring surface if necessary.  

I went old school and used a simple tea cup to cut my biscuits. 


 
Transfer as many as you can make with your dough to a greased baking sheet, arranging them 2 inches apart, and brush tops with milk or cream. 

Bake until pale golden, 12 to 15 minutes, then transfer to a rack to cool to room temperature.

 
On to the strawberry jam. You can make this while the biscuits are baking. It takes about the same time. 

yield: Makes about 1 1/2 cups
Ingredients: 



  • 1 pound fresh (or frozen, thawed) hulled, quartered strawberries
  • 1/2 cup sugar
  • 1 large Granny Smith apple, peeled, coarsely grated
  • 1 tablespoon fresh lemon juice

Combine 1 cup hulled, quartered strawberries and 1/2 cup sugar in a large heavy skillet. 

Stir in 1 peeled, coarsely grated large Granny Smith apple. 


Cook over medium-low heat, stirring and breaking up strawberries, until sugar dissolves. 

Simmer until jam is thickened, 10-15 minutes. 

Stir in 1 tablespoon fresh lemon juice. 

Transfer to a bowl or jar; let cool.

Baked Scallops with Breaded Crumbs
Ingredients
  1. 4 Frozen Big Scallops (Thaw and pat dry)
  2. 8 Ritz Biscuits (Crushed into fine crumbs)
  3. 1 tablespoon of White Wine
  4. 1 1/2 tablespoon of Butter
  5. 1/2 teaspoon of Coarse Black Pepper
  6. 1/2 teaspoon of Dried Parsley
  7. 1/2 teaspoon of Salt
Preparation
  1. Place Scallops on Aluminium Tray or Foil
  2. Spread White Wine over Scallops
  3. Sprinkle Salt and Pepper
  4. Spread Butter
  5. Spread Bread Crumbs
Steps

Baked Scallops into preheat oven for 20 to 25 minutes at 200 degree celsius.

Sprinkle Parsley over Scallops

Serve while Hot!

Good to be serve as a Side with a Main Course, or as a finger food in an intimate event.

Baked Chicken Breast with Stuffed Tomato and Asparagus

Baked Chicken Breast with Stuffed Tomato and Asparagus
Chicken:

Ingredients
  1. Chicken Breast
  2. 3/4 tablespoon of Minced Garlic
  3. Coarse Black Pepper
  4. Mixed Herbs (eg. Brand Masterfood)
  5. Sea Salts
  6. 1 1/2 tablespoon of Olive Oil
Steps
  1. Sprinkle Salts on Chicken Breast
  2. Sprinkle Black Pepper
  3. Sprinkle Mixed Herbs
  4. Spread Minced Garlic
  5. Add Olive Oil
  6. Marinate the above for 30 minutes

Stuffed Tomato with Swiss Brown Mushroom:

Ingredients
  1. Tomatoes (Any amount)
  2. Swiss Brown Mushroom (150g, Sliced)
  3. 1 tablespoon of Minced Garlic
  4. 4 tablespoon of Tempura Sauce
  5. Coarse Black Pepper
  6. 1 tablespoon of Olive Oil
Steps
  1. Slice off the tomatoes top and scoop out the tomatoes, leaving 0.8cm depth
  2. Add Olive Oil on Hot Pan
  3. Add Garlic and stir-fry until fragrant (before it turned brown)
  4. Add Mushroom and stir-fry for approx 2 minutes
  5. Add Tempura Sauce, sprinkle Black Pepper and stir-fry to mix well until mushroom is cooked (approx 2 minutes)
  6. Fill up Tomato with Mushroom

Ingredients (Asparagus)
  1. 6 to 8 Small Asparagus (Cut off approx 3cm from the bottom, and Peel off the 1st layer using a fruit peeler)
Steps (Baking)
  1. Place Asparagus on Baking Tray
  2. Sprinkle Salts
  3. Place Chicken Breast on top of Asparagus
  4. Place Tomatoes on Baking tray
  5. Bake the above for approx 15 to 20 minutes in a preheat oven, 200 degree celius
  6. At 12 minutes, turn the chicken breast and adjust timing according.

Rasins Muffins

Rasins Muffin

Rasins Muffins Overflow in Oven

This is the first time I baked muffins and I chose Rasins Muffins as I would think that it is the simplest to prepare with just Rasins as one of the main ingredients.
 
The whole baking process was a mess! I forgot to buy muffin tray and I thought using muffin paper cups will be able to hold up the muffin, but I was WRONG. The muffin mixture flowed out of the paper cups and my whole microwave oven was flooded with muffin mixture. Only one out of ten muffins was a success with a "muffin" look! =(
 
I am not giving up on baking, but I guess I must make sure that I have the right set of tools before I will go for the second try! =)

Ingredients
  1. 180g of Plain Flour
  2. 110g of Caster Sugar
  3. 60g of Butter (Melted)
  4. 2 small eggs (Beaten)
  5. 1/2 tablespoon of Baking Soda
  6. 80g Rasins
  7. 120g of Milk (I used HL milk)
Steps
  1. Sieve Flour in a big mixing bowl
  2. Sieve Baking Soda
  3. Sieve Caster Sugar
  4. Mix well
  5. Add Butter, Eggs, Milk and mix well by using folding in method. (the mixture must remain thick and not waterly.)
  6. Fold in Rasins
  7. Put paper cups into muffin tray and fill up 3/5 of the paper cups with muffin mixture.
Bake Muffin into a preheat oven for approx 20 minutes, 200 degree celius.
Use a toothpick to check if it is cooked. If the toothpick is dry, the muffin is ready!

Many people stick to the breads and cereals for breakfast but not me. I LOVE getting creative in the kitchen and making breakfast recipes that are a bit out of the ordinary is one of my specialties. Of course, the one requirement is that they have to be yummy!

So today I’m going to share the recipe to my delicious stuffed breakfast tomatoes. Although they take a while in the oven, you can prepare them very quickly. So what I do is whip them up, throw them in the oven, then finish doing all my morning things. By the time they are ready, I’m ready. So they’re actually an easy treat!

I hope you enjoy them.

Spinach Stuffed Tomatoes

Serves 2
Approx. 40 minutes prep/cook time
Ingredients
  • 6 tomatoes
  • 6 eggs
  • Approx. 2 cups baby spinach
  • Sea salt
Cooking Method
1. Preheat oven to 390°F (200°C)
2. Cut the tops off the tomatoes and using a dessert spoon scoop out the insides into a bowl. Don’t throw this way but use it in another recipe, soup or stir-fry
3. Place the tomatoes in a greased ceramic baking dish
4. Fill the tomatoes about 3/4 full of baby spinach. Don’t pack it down too much or the egg will spill over the edges. Instead you want it to seep in and through
5. Sprinkle some sea salt over the spinach
6. Crack one egg into each tomato
7. Bake for 20-30 minutes or until eggs are set
8. Serve and enjoy!
Note: Sprinkle with pepper if you choose

Caribbean Style Baked Chicken Wings

The Caribs love fruits and use them in their cooking whenever they get a chance. So don’t be surprised if you taste few chunks of pineapple or oranges along with the chicken. The sweet fruity flavours strike the right chord with the spicy zest and give a whole new dimension to the dish.

If you are planning to tuck in Caribbean style baked chicken wings, then get ready for some fiery zing. You might not find it too spicy at first shot but as the jalapeno peppers slowly starts spreading its heat, it will definitely blow away your mind and palate alike.

Ingredients:

                     3 lb chicken wings, skinned
                     8 oz pineapple chunks along with the juice
                     1 onion, sliced into thin strips
                     ½ tsp ground coriander
                     4 jalapeno peppers, finely chopped
                     2 tbsp fresh cilantro leaves, finely chopped
                     ½ cup chicken broth
                     Juice of ½ lime
                     Salt and freshly ground black pepper to taste

Instructions:

1.                  Line a baking dish with aluminium foil and arrange the chicken wings side by side.
2.                  Add a splash of lemon juice over them along with a dash of seasonings and coriander.
3.                  Top it up with a layer of pineapple chunks, followed by onion strips and empty the chicken broth over them.
4.                  Cover the dish with another foil and put it in an oven, preheated at 350 F.
5.                  Bake the chicken for half an hour before flipping it over and cooking it, covered, for another 20 minutes.
6.                  Baste the chicken with the pineapple juice and bake it for about 10 minutes.
7.                  Once the chicken wings are glazed and golden brown, place them in a serving bowl and scatter the onion and pineapples over it.
8.                  Finish it off with the cilantro leaves on top and serve.

Baked Scallops with Cheeze, Bacon and Parsley

I bought a packet of the premium scallops with shells at SGD$8.90 per packet (7 big shells). As I am unsure how fresh is the scallops, I use a safer method to cook it. I baked them with some mozzarella cheeze and back bacon that I can find in my fridge. It is a very simple recipe, but yet, it tastes very decent and I have to say that seafood in shells definately look better in picture!

Ingredients
  1. 3 Big Scallops (Thaw and Washed and dry it with paper towels)
  2. Mozzarella Cheese
  3. Bacon Bits
  4. Parsleys (eg. Brand Masterfood)
Steps
  1. Spread Mozzarella Cheese on Scallops
  2. Sprinkle Bacon Bits and Parsleys
Place Scallops on a baking tray or aluminium foils and put it into a preheat oven at 220 degree celius at approx 15 to 20 minutes.
At 12 minutes, check if Scallops is cooked and adjust the timing accordingly.

This is my favorite lasagna recipe. Please keep in mind, with alarge family I multiply recipes for large crowds! The basic ingredient quantities are given along with variations that I have used successfully.

Spinach Filling

2 lbs Ricotta Cheese ( may substitute cottage cheese, I now useour homemade ricotta)
2 - 10 oz  pkgs frozen chopped spinach
1 tsp garlic powder
1 tsp salt
Combine all ingredients in bowl.

Tomato Sauce
I use frozen tomato sauce from last years garden and add Italianspices. For a meat option, brown 1 lb ground beef or turkey meat and add totomato sauce.

Assembly
In a 13 x 9 pan, starting with a bit of tomato sauce in the bottomto prevent sticking,

Layer:
  • Lasagna Noodles (Eggplant     slices may be substituted and work great!)
  • Spinach Filling
  • Tomato Sauce
  • Mozzarella Cheese (I now use our homemade cheese)
End with Mozzarella Cheese. Bake at 350F for 1 hour.

Variation: Since our eggplant did so well last year, I peeled it,sliced it and froze it. Now, I use eggplant slices instead of lasagna noodles.

If you are like me and love your coffee, be it morning, afternoon or night, you also enjoy biscotti. But also like me, you might not enjoy it as often as you would like because of the price. Besides that, most recipes are too involved and do not turn out quite right. Here is a wonderfully easy and good recipe. I will first give the basic recipe and then some variations.

Pecan Biscotti
1/4 c. butter                             1 whole egg white
3/4 c. sugar                              2 c. flour
1/2 tsp salt                                1 1/2 tsp baking powder
1 tsp vanilla                               3/4 c. chopped pecans
1 whole egg                               1 egg white beaten (to brush on top)

Preheat oven to 350F.
Mix butter, sugar, salt and vanilla.
Add egg and egg white - mix well.
Add flour, baking powder and nuts. Stir well adding a bit more flour if needed to make a sticky but workable dough.
Form dough into a long log about 3/4 inches high and 2 1/2 - 3 inches wide and 15 inches long. Brush top with beaten egg white.


Bake in preheated oven 350F for 30-35 min.
Remove from oven and after a couple of minutes, lift log off pan to cutting board. Cut into bars about 1/2 inch thick.


Place bars cut side up on cookie sheet and return to oven. Bake for 15 - 20 minutes longer.


Cool completely and store in an airtight container.
Variations: I have used all white flour and also used half whole wheat and half white flour.
Substitute maple flavoring for vanilla.
Add 1/2 c. dry fruit such as dried apricots to batter.
Any nut may be used such as hazelnuts or almonds.

Baked Garlic Prawns with White Wine and Parsley
Using White Wine for a light marination to the prawns bring out the sweetness of the prawns. And by baking it with Garlic and a dash of parsley infused a delicious aroma fragrant that after a day, my oven still smell of baked prawns! =)

As I do not have large prawns, hence, I am using a Medium ones. But it is recommended for the best result, large prawns are used instead.

For seafood lovers, I am sure that you will like this dish as much as I do.

This dish can be served as a Chinese dish or a Western dish as a Side. If large prawns are used, it can even be served as a main course. Placing the prawns on a nice plate, this dish will definitely be good to be serve in an intimate event.

Ingredients
  1. 12 Medium Prawns (Deveined)
  2. 2 tablespoon of Chopped Garlic
  3. 3 tablespoon of White Wine
  4. 1 tablespoon of Dried or Fresh Chopped Parsley (eg. Brand Masterfood)
Preparations
  1. Slice the prawn in the middle without cutting it into 2 to make space for the Garlic
  2. Marinate the prawns with White Wine for 30 minutes
  3. After Marinating, add Garlic on the slice part of the prawns
  4. Sprinkle a little Parsley on the Prawns
  5. Place Prawns on a Baking Tray/ Aluminium Foil and use a Aluminium Foil and lightly covered it on top of the prawns
Steps
  1. Place Prawns into a preheat oven, 220 Degree Celius for 15 minutes
  2. At 12 minutes, check if the prawns are cooked and adjust the timing accordingly
Serve while Hot!

Tips and Comments:
  • Large Prawns are recommended to be used for this dish.
  • Using a kitchen scissor to cut the prawn's shells starting from it's head to the tails, then use a small knife to devein it.

Barbecue Chicken Pizza
Barbecue Chicken Pizza Recipe (makes one 12-inch pizza)
Ingredients
  1. 1 pre-baked pizza crust
  2. ¾ cup favorite barbecue sauce
  3. 2 boneless, skinless chicken breasts (cooked and shredded – about 1 ½ cups)
  4. ½ cup sliced red onion
  5. 2 cups shredded cheese (Monterey jack, parmesan, or mozzarella)
  6. Cilantro (chopped) – optional
Steps
Preheat over or grill to 400°.
*If your pizza dough/crust comes with specific instructions before placing any sauce or toppings on it, follow those directions first.
Spread ¼ cup of the barbecue sauce evenly over pizza crust leaving about 1 inch of dough around edges uncovered. 
Next, in a medium bowl, combine shredded chicken, red onion, and remaining barbecue sauce.  Toss just until chicken is covered in the barbecue sauce.  Spread over pizza crust.  Cover with shredded cheese.
Bake or grill for approximately 15-20 minutes or until cheese starts to get bubbly.  If grilling the pizza, make sure to cook over an indirect heat source so the bottom of your pizza doesn’t get charred.
When ready, remove from oven and sprinkle with chopped cilantro.  Cut into pieces and ENJOY!

Baked Salmon with Garlic and Parsley
I have shared a Salmon Recipe before, this time round, instead of Grilling, I baked it instead with Garlic and a longer marinating time. Enjoy!

Ingredients
  1. 1 Salmon Fillet
  2. 1 tablespoon of Garlic
  3. 4 tablespoon of Olive Oil
  4. 2 teaspoon of Fresh or Dried Parsley (eg. Brand Masterfood)
  5. 1 teaspoon of Course Black Pepper
  6. 1/2 teaspoon of Salt
  7. 1/3 Lemon (Squeeze into Juice, do not throw away the skin)
Preparation
  1. Mixed Ingredients No. 2 to 7 (with the lemon skin) and use it to marinade the salmon for approx 2 hours in a fridge
Steps
  1. Place Salmon with all the marinade on baking tray, adding the Lemon Skin on the Salmon. Cover Salmon with a Aluminium Foil.
  2. Put Salmon into Pre-heat Oven, 220 Degree Celsius for approx 15 minutes.
  3. After 10 minutes, check if Salmon is cooked and adjust the timing if required to.
Serve while Hot!

Good as a Main Course with a side dish or go with Rice.

Baked Oysters with Cheese, Herbs and White Wine

Oyster with Cheese, Herbs and White Wine

Oysters are not cheap when you dine in a restaurant, regardless they are fresh or baked or carpeted in a steak. Since I have not experimented with recipes that include oysters as ingredients before, I decided to give it a try. I can say that my first try taste not bad at all! =)

Ingredients
  1. 8 Frozen Oysters (Dethawed)
  2. Shredded Mozzarella Cheese or Parmesan Cheese
  3. Mixed Herbs or Dried Parsley will do
  4. 2 teaspoons of White Wine
Steps
  1. Drip 2 teaspoons of White Wine evenly onto 8 Oysters
  2. Add Cheese and Sprinkle Mixed Herbs or Dried Parsley on Oyster
  3. Put Oyster into preheat Oven at 200 Degree Celsius approx 10 minutes
Serve while Hot!

Good to serve as Side, Party Finger food, or go with Steak and White Wine.

Tips and Comments:
  • This recipe is so easy to cook with minimum preparation.
  • As those oysters that I have purchased does not come with shells, hence I use Aluminium foils to make into shells lookalike to keep the ingredients in placed on the oyster. If this is too troublesome, you can use paper cups meant for cupcake or muffin baking tray.
  • Add some bacon bits if cheese alone is not too interesting for you.
  • Instead of White Wine, you can add some Sherry or Lemon Juice.

Baked Potato with Sour Cream and Bacon Bits

Baked Potato with Sour Cream and Bacon Bits

Ingredients
There is no hard and fuss rules on the ingredient quantity for this recipe, it depends on your preference. Good to have more bacon bits thou' =)
  1. Potato or Mini Potato for Party
  2. Sour Cream
  3. Chives (Chopped)
  4. Coarse Black Pepper
  5. Bacon Bits (eg. Brand Hormel)
  6. Rosemary (eg. Brand Masterfood)
  7. Parsley (eg. Brand Masterfood)
Steps
  1. Washed Potato thoroughly
  2. Boiled Potato - you can use a fork to test it doneness (if the fork can go throu', approx 15 minutes), once done, drain off the water
  3. Cut the Potato into half, and scooped out some portion of the potato, leaving space approx 1.5cm thickness overall for a solid base to fill up Sour Cream mixture
  4. Grease baking pan and put potato into preheat oven (200 degree celsius, approx 15 minutes)
  5. After 10 minutes, test if potato is fully cooked and adjust timing accordingly if required.
  6. Once fully cooked, remove them from oven
  7. Add Sour Cream, Bacon Bit, Chives, Black Pepper, Rosemary, Parsley and Salts into a mixing bowl and mix well
  8. Fill the Potato with the mixture.
This can be serve Warm or Cold (chilled it).

Good to go with Roast Chicken or as a Side or Cold Appetizer or Finger food in a party.

Tips & Comments:
  • Boiled potato 1st then baked - This is to shorten the baking timing.
  • You can add butter on Potato that just came out from the oven for a better taste.

Baked White Snapper

Ingredients
  1. White Snapper
  2. Olive Oil
  3. Salts
  4. Coarse Black Pepper
  5. Mixed Herbs (Rosemary, Parsley, Basil, Oregano. eg. Brand Masterfood)
  6. 1 1/2 tablespoon of Chopped Garlic
  7. 2 teaspoon of Red Cooking Wine (eg. Brand Virginia Dare)
  8. Dried Red Chilli Flakes (eg. Brand Masterfood)
  9. Margarine 
  10. Lemon
Steps
  1. Grease Olive Oil on aluminium foil, place Snapper on aluminium foil
  2. Rub Salts on Snapper
  3. Add Red Cooking Wine
  4. Sprinkle Black Pepper
  5. Sprinkle Mixed Herbs
  6. Add Chopped Garlic on Snapper
  7. Sprinkle Chilli Flakes
  8. Spread Margarine on Snapper
  9. Shred some Lemon Skin on Salmon and squeeze some Lemon Juice on it
  10. Leave it for a good 10 to 20 minutes for ingredients to set into the Snapper.
  11. Add Sprinkle some Olive Oil on Snapper
Preheat Oven and place the Snapper into the Oven (200 degree celsius, approx 15 to 20 minutes).
Turn the Snapper after approx of 12 minutes, and spread the olive oil on the Snapper.
Use a fork and test if the Snapper is cooked and adjust the time accordingly if required.
Serve while Hot!
