About Me

I love to cook and more importantly, I like to improve the way I cook certain dishes. As such, this blog is borne out of a desire for a simple and organized way to manage the different variations of the dish that I tried. I will be posting recipes, pictures and comments on what works for me and what don’t. Hopefully, you will enjoy your time here, and do remember to give your feedback! Cooking is a constant evolution, a process and definitely not an end result!

Sambal Chilli Crayfish/ Slipper Lobster

Crayfish in HappyCallPan

Crayfish in HappyCallPan - Closer shot

Crayfish with Sambal Chilli in HappyCallPan - Closer shot
This is a spicy dish for chilli lovers.
Ready-made Sambal Chilli can be conveniently purchase from any supermarket, hence it made the recipe for dish reduces at least half of its steps. But I have to say that I took a long time to choose the bottle of sambal chilli as there are many varieties. Some of them taste more sour than the rest, and from my experience, they look lighter or "orangish" in the color of the sambal chilli sauce. My preferred taste for this dish is spicy but yet it comes with a "little sweetness". Finally, I decided to go with A1 brand as it looks deep dark red, without the chilli seed visible. I tried cooking, and yeah... this is the taste that I wanted. =)
Ingredients
  1. 6 or 900g Crayfish/ Slipper Lobster (Use a kitchen scissor to cut into two)
  2. 2 Big Red Onion cut into thin slices
  3. 6 to 8 Tablespoons of Sambal Chilli (eg. Brand A1, quantity based on individual liking on spicyness)
  4. 2 tablespoon of Olive Oil or Any Cooking Oil
Steps
  1. Add Olive Oil into happycallpan
  2. Add half of the total Onion and stir-fry until translucent or fragrant
  3. Spread Crayfish onto happycallpan and close the lid
  4. When there is steam, turn the pan. Open the lid and spread the remaining onion on the other side of the crayfish and close the lid.
  5. After approx 2 minutes, add Sambal Chilli onto Crayfish and close the lid for approx 3 minutes or until the crayfish is cooked.
Serve while Hot!

Good to go with Rice and a bowl of Chinese Soup and 2 to 3 more Chinese dishes.

Stir-fry Garlic Prawns in Oyster Sauce
This dish is very similar with a recipe that I have shared earlier, Stir-fry Prawns in Oyster Sauce and Black Pepper. This time, I have cooked this dish without black pepper and it tastes "sweeter" with lesser taste of spice. This dish goes very well with rice too! Seafood lovers, you will like this.

Ingredients
  1. 8 Large Tiger Prawns (Devein, keeping the prawns shell)
  2. 4 Slices of Ginger (Peeled)
  3. 1 tablespoon of Chopped Garlic
  4. 1 1/2 Tablespoon of Oyster Sauce
  5. 3 tablespoon of hot water
  6. Olive Oil
Steps
  1. Add 2 tablespoon of Olive Oil in hot pan
  2. Add Prawns and Stir-fry until both side of the prawns are 80% cooked
  3. Leave Prawns aside in a plate
  4. Add 1 tablespoon of Olive Oil in hot pan
  5. Add Ginger and fry until fragrant
  6. Add Garlic and fry until fragrant
  7. Add Prawns and fry for 1 to 2 minutes
  8. Add Oyster Sauce and stir-fry until prawns is cooked approx 2 minutes
  9. Add hot water and stir to mix well for approx 2 minutes
Serve while Hot!

Good to go with Rice and a bowl of Chinese Soup and 2 to 3 more Chinese dishes.

Tips and Comments:
  • The easiest way to devein a prawns while keeping the shell is by using a kitchen scissor. Cut the back of the shell starting from the head end to the tail. Then use a small knife to devein.
  • Fry prawns 1st to force out the sweetness of the prawns. Do not discard the oil after frying, as it will make a good gravy. Hence, is recommended to use Olive Oil for healthier reason.
